Rheum rhabarbarum 'Canada Red' is a top cultivar of culinary rhubarb. It is noted for its shorter, more slender stalks that are tender, very sweet and juicy with good, red colour. Although rhubarb is a vegetable, the stalks are often used like a fruit in the production of preserves and desserts, the most famous being strawberry rhubarb pie! Remove the large leaves and discard before cooking. Bold spikes of white flowers emerge in summer and should be removed to encourage more foliage growth. Makes for a beautiful ornamental too in a sunny flower bed. Do not harvest until the second year. Deer resistant.
