Allium ampeloprasum var. ampeloprasum is known as elephant garlic. It resembles classic garlic (Allium sativum) but produces much larger heads that are milder in flavour. Eat it raw or roasted, baked, or sauteed. Plant in fall and harvest in mid to late summer.
