Amaranthus caudatus 'Coral Fountain' known as the tassel flower, is an ornamental and edible annual with drooping, peachy-coral inflorescence that can reach a staggering three feet long - staking may be required. Flowers are self-pollinating and seeds may be harvested when flowers are fully open. The seeds are an ancient grain used by the Aztec, Inca and Mayan civilizations. Both foliage and seeds are edible, delicious, protein rich and gluten free. Very easy to grow, low maintenance and heat-loving. Use in the ornamental and food garden, container and in bouquets either fresh or dried. Pollinator friendly.
